Gava Pita Guli(Wheat Flour Laddoo’s)

These laddoos are a specialty of the GSB Konkani people and are prepared on various occasions such as festivals, Remembrance Day, and as a snack. They are a staple in almost every household, often with minor variations. This recipe is a personal favorite, enjoyed by my husband and our baby.

How to make Gava Pita Guli (Wheat Flour Laddoo’s) :

Start by roasting the nuts of your choice and allow them to cool down. Grind them to a powder. While the nuts are cooling, begin roasting the wheat flour on low flame, gradually adding ghee. Continue roasting until it turns a nice golden brown color. Once the dough reaches a crumbly, sand-like consistency, add in the ground nuts and turn off the flame. Allow it to cool slightly. While still warm, add the powdered sugar and cardamom powder. Mix well and form into balls.

Wheat flour laddoos are delightful Indian sweets made from roasted wheat flour, ghee (clarified butter), sugar, and nuts.

Ingredients
  

  • 1 cup wheat flour
  • 1/2 cup dried nuts of your choice almonds/walnuts, finely chopped
  • 1/2 cup ghee
  • 1/2 tsp cardamom powder
  • 3/4 cup powdered sugar

  • In a heavy-bottomed pan set over the lowest flame, add the wheat flour. Stir continuously to roast the flour until it turns a golden brown color and releases a nutty aroma. Add 2 tbsp of ghee every 5 minutes or so during the roasting process until the mixture becomes crumbly. This may take around 15-20 minutes. Be careful not to burn the flour.
  • Roast the nuts separately in the pan, then allow them to cool down. Grind the nuts into a powder and add them to the wheat flour.
  • Sprinkle the cardamom powder into the mixture and stir well.
  • Turn off the heat and allow the mixture to cool down slightly; it should still be warm to the touch.
  • Gradually add the powdered sugar to the warm flour and nut mixture. Mix well until the sugar is completely incorporated. The warmth will help the sugar to melt slightly, which helps in binding the mixture.
  • Once the mixture is cool enough to handle but still warm, take small portions and shape them into ladoos with your hands. Press firmly to form a round shape. If the mixture feels dry, you can add a little more ghee to aid in binding the ladoos.
  • Allow the ladoos to cool down completely before storing them in an airtight container.
