Ingredients
  

  • 6-7 ripe mangoes peeled and pitted
  • 4-5 Tbsp jaggery or to taste, based on mango sweetness
  • A pinch of salt
  • 1/4 tsp cardamom powder

  • Begin by selecting ripe and flavorful mangoes. Peel the mangoes and remove the pits to access the luscious pulp.
  • To the ripe mango pulp add the desired amount of jaggery. The amount of jaggery can be adjusted to suit your taste preference and the sweetness of the mangoes.
  • Sprinkle a pinch of salt. The salt enhances the natural sweetness of the mangoes and balances the flavors.
  • Add 1/4 tsp of cardamom powder. The aromatic cardamom infuses the Amras with a delightful fragrance.
  • mix all the ingredients together. The result will be a velvety and delightful mango pulp, ready to be relished.
  • Pour the Amras into a serving bowl.
  • To enhance the experience, chill the Aamras in the refrigerator for a short while before serving. The refreshing cold temperature elevates the taste and makes it even more enjoyable on a warm day.

Notes

Note:
Use fresh Ataulfo or Kent, which are available in season in most American supermarkets. Choose the nonfibrous type and go for fruit that is soft to the touch but still has some firmness to it, like how you'd choose a peach.
Color is not a good indication of ripeness; many red mangoes can be green inside, and others can be yellowish-green on the outside but ripe and sweet inside. Always go by feel instead of appearance.
