- Ingredients:
- 1 tsp oil
- 1/2 tsp mustard seeds
- A big pinch of hing asafoetida
- A few sprigs of curry leaves
- 1-2 dry red chillies
- 1-2 green chillies
- 1 lb chopped French beans
- 1 small potato chopped
- 2 tbsp fresh grated coconut
- water as required
Prepare Vegetables:
Wash and chop the French beans and potato into bite-sized pieces.
In a pan, heat oil over medium heat. Add mustard seeds and let them splutter. Add hing, curry leaves, dry red chillies, and green chillies. Sauté for a minute.
Add the chopped French beans and potato to the pan. Mix well to coat the vegetables with the tempering.
Cover the pan and let the vegetables cook on low to medium heat. Stir occasionally to ensure even cooking.
Season the dish with salt to taste. Adjust according to your preference.
Add some water and Cook until the vegetables are tender but still have a slight crunch.
Once the vegetables are almost cooked, add fresh grated coconut. Mix well and cook for an additional 2-3 minutes.
Once the vegetables are fully cooked, remove from heat. Serve the Beans and Batata Upkari hot as a side dish with rice or chapati.
