Ingredients
  

  • Oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds jeera
  • 1/4 tsp asafoetida hing
  • 1/2 tsp fenugreek seeds methi
  • 1/2 tsp urad dal
  • 1/4 tsp fenugreek seeds
  • Few curry leaves
  • 2-3 green chillies
  • 1 onion finely chopped
  • 1 tomato finely chopped
  • 1/4 tsp turmeric powder
  • 1-2 tsp sugar
  • Salt to taste
  • 1/4 cup water
  • 2 cups bread chopped into cubes
  • 2-3 tbsp fresh grated coconut

Instructions
 

  • In a pan, heat oil over medium heat.
  • Add mustard seeds and let them splutter. Then, add cumin seeds, asafoetida, fenugreek seeds, and urad dal. Sauté for a few seconds until they release their aroma.
  • Add the green chilli and curry leaves to the pan. Sauté for a minute until the curry leaves become slightly crispy.
  • Add the onions and saute till transparent and add in the tomato and cook till the tomatoes are mushy.
  • Now, add turmeric powder, sugar, and salt to the pan. Mix well to coat the ingredients with the spices.
  • Pour the water into the pan and mix everything together. Allow it to come to a simmer.
  • Add the chopped bread cubes to the pan and mix well, ensuring that the bread is coated with the spice mixture. Adjust the seasoning if needed.
  • Continue to cook the bread upma for a few minutes, stirring occasionally, until the bread cubes are well combined with the spices and become slightly crisp.
  • Finally, add the freshly grated coconut and mix it into the upma. The coconut adds a lovely flavor and texture to the dish.
  • Serve the delicious Bread Upma hot as a quick and flavorful breakfast or snack.

Note:
If you are using leftover sourdough bread, you can skip adding tomatoes to the Bread Upkari recipe. The sourdough bread already adds a tangy flavor to the dish, so omitting the tomatoes will still result in a delicious and flavorful Bread Upkari. Enjoy your unique twist on this GSB Konkani delight!
