Cabbage Upkari(Sabzi)

Ingredients
  

  • 1 tsp Oil for cooking
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Jeera cumin seeds
  • few curry leaves
  • 1/2 cabbage finely chopped
  • 1/2 onion finely chopped
  • 1/2 tomato finely chopped
  • 1-2 tspKumta masala powder combination of 1/2 tsp red chili powder, 1tsp coriander powder, and 1/2 tsp jeera powder
  • Salt to taste
  • Jaggery a small piece or to taste
  • Fresh grated coconut for garnishing
  • coriander leaves for garnishing
  • Frozen peas optional

Instructions
 

  • Heat oil in a pan or kadai over medium heat. Add mustard seeds and let them splutter. Then add jeera and sauté for a few seconds until fragrant. add Curry leaves and saute for 15 seconds
  • Add the finely chopped onion and sauté until it turns translucent.
  • Add the finely chopped tomato and cook until it becomes soft and mushy.
  • Add the finely chopped cabbage and mix well. Cover the pan and cook for a few minutes until the cabbage starts to soften.
  • If using frozen peas, add them to the pan at this stage and mix well.
  • Sprinkle kumta masala powder over the cabbage mixture. Adjust the quantity based on your desired spice level. Mix well to coat the cabbage evenly with the masala.
  • Add salt to taste and mix again.
  • Add a small piece of jaggery for a hint of sweetness. Adjust the quantity based on your taste preference.
  • Cover the pan and cook the cabbage mixture on low heat until it is cooked through. Add a little water if required. Stir occasionally to prevent it from sticking to the bottom.
  • Once the cabbage is cooked and tender, remove from heat.
  • Garnish with fresh grated coconut and coriander leaves.
  • Serve the Cabbage Upkari as a side dish with rice, chapati, or any Indian bread of your choice.
