Heat oil in a pan or kadai over medium heat. Add mustard seeds and let them splutter. Then add jeera and sauté for a few seconds until fragrant. add Curry leaves and saute for 15 seconds
Add the finely chopped onion and sauté until it turns translucent.
Add the finely chopped tomato and cook until it becomes soft and mushy.
Add the finely chopped cabbage and mix well. Cover the pan and cook for a few minutes until the cabbage starts to soften.
If using frozen peas, add them to the pan at this stage and mix well.
Sprinkle kumta masala powder over the cabbage mixture. Adjust the quantity based on your desired spice level. Mix well to coat the cabbage evenly with the masala.
Add salt to taste and mix again.
Add a small piece of jaggery for a hint of sweetness. Adjust the quantity based on your taste preference.
Cover the pan and cook the cabbage mixture on low heat until it is cooked through. Add a little water if required. Stir occasionally to prevent it from sticking to the bottom.
Once the cabbage is cooked and tender, remove from heat.
Garnish with fresh grated coconut and coriander leaves.
Serve the Cabbage Upkari as a side dish with rice, chapati, or any Indian bread of your choice.
