Jini Dosa

Jini Dosa is a delicious and popular street food in India. It's a fusion of Indo-Chinese flavors with the traditional South Indian dosa.

Ingredients
  

  • 2 cups dosa batter fermented rice and lentil batter used for making dosas
  • 1-2 tablespoons butter
  • 1 small onion finely chopped
  • 1 teaspoon ginger and garlic paste
  • 1/2 tomato finely chopped
  • 1 capsicum/bell pepper finely chopped
  • 1 carrot shredded/grated
  • 2 tablespoons tomato ketchup
  • 2 teaspoons sriracha sauce adjust to your spice preference
  • 1/4 teaspoon pav bhaji masala
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon chaat masala
  • 1/4 cup water
  • Salt to taste
  • Finely chopped coriander leaves
  • Grated cheese optional

Instructions
 

  • In a pan, heat some butter and add finely chopped onions, ginger, and garlic paste.
  • Add the finely chopped tomatoes, capsicum, and shredded carrot.
  • Add tomato ketchup and sriracha sauce over the vegetables and saute for few minutes.
  • Sprinkle pav bhaji masala, red chili powder, and chaat masala for additional flavor.
  • Pour a little water. Allow it to cook for 1-2 minutes until the vegetables soften slightly.
  • Heat a flat non-stick griddle or tawa on medium heat.
  • Take 1 ladleful (about 1/2 cup) of dosa batter and spread it in a circular motion on the heated tawa to form a thin dosa. Drizzle a little butter around the edges of the dosa.
  • Once the dosa is half cooked, add the vegetable mixture and spread it evenly. Also, add chopped coriander leaves and grated cheese if using.
  • Once the cheese melts and the dosa is cooked, cut the dosa into 4-5 strips and roll or fold the dosa from one side to form a roll.
  • Grate some cheese on top and garnish with coriander/cilantro leaves.
  • Serve the delicious Jini Dosa hot with coconut chutney, sambar, or even more tomato ketchup on the side.
