In a pan, heat some butter and add finely chopped onions, ginger, and garlic paste.
Add the finely chopped tomatoes, capsicum, and shredded carrot.
Add tomato ketchup and sriracha sauce over the vegetables and saute for few minutes.
Sprinkle pav bhaji masala, red chili powder, and chaat masala for additional flavor.
Pour a little water. Allow it to cook for 1-2 minutes until the vegetables soften slightly.
Heat a flat non-stick griddle or tawa on medium heat.
Take 1 ladleful (about 1/2 cup) of dosa batter and spread it in a circular motion on the heated tawa to form a thin dosa. Drizzle a little butter around the edges of the dosa.
Once the dosa is half cooked, add the vegetable mixture and spread it evenly. Also, add chopped coriander leaves and grated cheese if using.
Once the cheese melts and the dosa is cooked, cut the dosa into 4-5 strips and roll or fold the dosa from one side to form a roll.
Grate some cheese on top and garnish with coriander/cilantro leaves.
Serve the delicious Jini Dosa hot with coconut chutney, sambar, or even more tomato ketchup on the side.
