  • 1 cup thick yogurt Greek yogurt works wonderfully
  • Salt to taste
  • 1/2 tsp sugar or jaggery optional, for a touch of sweetness

Instructions

  • Begin by preparing the vegetables. Finely chop the onion, cucumber, and tomato. Grate the carrot, adding a splash of vibrant color to the raita.
  • For a delightful hint of heat, finely chop the green chile. You can adjust the amount of chile according to your desired spice level.
  • In a mixing bowl, take the thick yogurt and whisk it until smooth and creamy. This creates the perfect base for the raita.
  • Add the finely chopped vegetables to the bowl, mixing them gently with the yogurt.
  • Season the raita with salt, adjusting it to suit your taste preference.
  • For those who enjoy a touch of sweetness, you can add 1/2 tsp of sugar or jaggery to enhance the flavors. This is an optional step, but it beautifully balances the tanginess of the yogurt.
  • Mix all the ingredients together until well combined, and your refreshing raita is ready.
  • To serve, garnish the raita with freshly chopped coriander leaves, adding a burst of herbaceous aroma to the dish.
  • Pair this delightful raita with any Indian meal - be it biryani, pulao, or even a simple dal and rice combination. Its cooling and creamy texture beautifully complements spicy dishes, providing a soothing and refreshing sensation to your palate.
