How to make the Jowar Bhakri :

Start by boiling water in a pot. slowly add the jowar flour into the boiling water while stirring continuously. Stir the flour and water mixture thoroughly to ensure even distribution and to avoid lumps, turn off the flame.

Set the mixture aside to cool down a bit. The mixture should be warm enough to handle comfortably. start kneading it to form a smooth dough. Kneading helps develop the elasticity in the dough. Divide the dough into small portions and roll them between your palms to form smooth balls. Take one of the dough balls and flatten it slightly. You can either use your hands or a rolling pin. Dust the ball with some dry jowar flour to prevent sticking. Roll out the dough ball into a thin, round flatbread (roti) on a clean, dry surface. The thickness can vary based on your preference, but jowar bhakris are usually thin.

Heat a tawa (flat skillet) on medium-high heat. Once it’s hot, place the rolled bhakri on the tawa. Cook it for a minute or two until you see small bubbles forming on the surface. Flip the bhakri to the other side using tongs or a spatula. Cook for another minute or until small brown spots appear on the underside. Repeat the rolling and cooking process with the remaining dough balls. Once cooked, remove the jowar bhakri from the tawa and serve it hot.

  • Gradually add the flour while stirring continuously. Use a spoon or spatula to mix the flour and water until it starts to come together.
  • As the dough begins to cool down a bit, you can start kneading it with your hands. Knead the dough for a few minutes until it becomes smooth and pliable. If the dough feels too sticky, you can add a little more jowar flour.
  • Once the dough is ready, cover it with a damp cloth or plastic wrap and let it rest for about 10-15 minutes. This resting period allows the flour to absorb the moisture evenly.
  • After resting, divide the dough into small, golf ball-sized portions. Roll each portion into a smooth ball between your palms.
  • Take one of the dough balls and flatten it slightly with your hands. You can either use a rolling pin or your hands to roll it out into a circular shape. If using a rolling pin, lightly dust the work surface and the dough with jowar flour to prevent sticking.
  • To make Jowar Bhakri, first, roll the dough into a small circle. If you notice the corners starting to break, dust the dough with flour. Then, use your fingers to gently seal the edges and continue rolling it out thinly.
  • This will help prevent the dough from sticking and breaking while rolling. Additionally, the thinness ensures even cooking and a better texture for the Bhakri.
  • Heat a flat skillet or tawa on medium-high heat. Place the rolled-out jowar bhakri on the hot tawa and cook for about a minute on each side.
  • Once you see brown spots on one side, flip the bhakri to the other side and cook for another minute or so. You can press down gently with a cloth or spatula to help it cook evenly.
  • Remove the jowar bhakri from the tawa and serve it hot with your favorite curry, chutney, or vegetable dish.
