  • 1 cup pearl millet bajra flour
  • 1/2 cup blanched almond flour
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 cup milk any milk of your choice
  • 2 tablespoons butter melted
  • 1 tablespoon sugar jaggery, or maple syrup (sweetener of your choice)
  • Pinch of salt
  • Additional butter or oil for greasing the waffle iron
  • Maple syrup or honey for serving (optional)

Instructions
 

  • In a large mixing bowl, combine the pearl millet flour, blanched almond flour, baking powder, and a pinch of salt. Mix well to ensure the dry ingredients are evenly distributed.
  • In a separate bowl, beat the eggs until they are well combined.
  • Add the milk, melted butter, and sugar/jaggery/maple syrup to the beaten eggs. Mix everything together until the wet ingredients are well incorporated.
  • Slowly pour the wet ingredients into the dry ingredients. Stir gently to form a smooth batter. Make sure there are no lumps, but avoid overmixing.
